Grilled Almond Butter and Blackberry Sandwich | Baking Serendipity

Today, I really just want to convince you to make a sandwich.

I think things like almond butter and smashed blackberries will help my effort.

If not, the fact that the bread is buttered and toasted, melting the insides of the sandwich and crisping the outer layer should definitely do the trick.

Life is short…you already know this. Days are hectic, and comfort food is best.

Please tell me peanut butter and jelly is comfort food in your world too. And, that this sandwich is about to become a breakfast/lunch/brunch reality. (It’s a totally versatile option.)

Grilled Almond Butter and Blackberry Sandwich

To make one sandwich, butter two pieces of bread. Set one, buttered side down in a skillet and spread the top of the bread generously with almond butter. Top with smashed blackberries. (Another berry of your choice would work here; just make sure it’s also smashed. I’d recommend avoiding jams and jellies. They’re a little too watery.) Finally, place the other piece of bread, butter side up atop the berries. Cook over medium heat, flipping just once and browning both sides of the sandwich. Slice in half and serve immediately.

Oh my gosh, I LOVE your sandwich! It looks so good!!! I think I”m going to have a PB Sandwich for lunch today! Wish I had black berries!

Grilled cheese PB&J sandwiches are always a treat. My husband thinks the combo is so strange but I love them. Fresh berries looks like an awesome addition.

Oh this is just pure heaven! A grown up PBJ! Is there anything better? I don’t have blackberries so I am going to use blueberries or maybe apple…Thanks for this yumminess!
