I kind of wish every morning was Christmas morning. It’s the kid in me…sort of grown up.

An everyday excuse to wake up with family, drink mimosas and be overwhelmed by God’s love is something I could seriously get into. Also…there’s the breakfast situation. I feel like the amount of thought put into Christmas breakfast should happen every weekend. (But I’m also a lover of breakfast…and stress.) (It’s maybe a different story problem.)

We really don’t need gifts every weekend. Just things like pancakes and milky coffee and maybe champagne and also love.

I imagine there are ways to arrange this.

And that they begin with sausage, eggs, cheese…and tater tots.

I humbly demand this become your Christmas morning breakfast. It’s equal parts simple and comforting and impressive. (Equal parts sounds weird with three things.)

Ground sausage is cooked in a skillet, and coated with a condensed cheddar soup. Here is the place to add veggies…if your family is into that kind of thing. I like onion and sweet red pepper, diced and would definitely sneak spinach in, but I’m afraid people at my house would yell.

The sausage and cheddar soup fills the bottom of a 9×13 casserole dish, and is topped with scrambled eggs. Pro-tip: I cook my eggs in a microwave safe bowl…because that’s how my mom always did it when we made breakfast pizzas on Christmas morning.

Tater tots make up the last layer. If this is sounding a lot like the dinner casserole made with ground beef and without eggs…it’s because it’s just a simple breakfast adaptation of it. I like finding inspiration in things that require minor changes to be something entirely different.

I also like my favorite people all around one table…This means come over! (And also, please understand that I have a small table, an always messy kitchen and a sometimes grumbly dog.) (Those are the things that embarrass the host in me.)

I hope your Christmas is full of warm hearts, red wine (not with breakfast) and KitchenAid mixers. Also! Cookies. Laughter. And, Jesus. It’s what this is all about.

Tater Tot Breakfast Casserole

1 pound ground sausage, cooked
1 10.75 ounce can cheddar cheese condensed soup
16 eggs, scrambled
1 bag tater tots
2 cups shredded cheddar cheese

Cook sausage in a skillet; drain fat. Stir in cheddar cheese condensed soup, and pour in the bottom of a greased 9×13″ baking pan. Cook eggs (I microwaved mine for 4-6 minutes, stirring every two minutes to create a scrambled texture) and layer atop sausage and cheese. Top with tater tots and bake for 35 minutes in a preheated 375° oven. Top with shredded cheese, and broil to melt. (Keep an eye on it; this goes quick!)

How many people does this serve and can you assemble it a day in advance?

This serves 8-10 people. I wouldn’t recommend making it in advance. The eggs need to go into the oven already scrambled and they will get tough.

This sounds awesome! Sausage, egg, cheese, and tater tots–I don’t think there’s a better combination. Yum!
