Peppermint Chocolate Chip Cookie Dough Stuffed Oreos

About this there’s always room for Oreos life motto…have you adapted it yet? Because there’s no time like now for these kinds of things.

There’s also no time like this exact moment to leave work, change into pj pants, drink hot chocolate and never stop reading Gone Girl. But that’s another story. (Seriously, though. Do this.)

What we really (really.really.) need to discuss is the magic of raw peppermint chocolate chip cookie dough stuffed in the middle of an Oreo, and dipped in chocolate.

(Shut your face. It’s eggless dough…because eggs and dough is exactly where your brain is going now. No?)

This is kind of a holiday truffle, gone extraordinarily out of control.

It’s the kind of thing you gift to people and then say I’m sorry, and also, you’re welcome in one quick breath.

It’s surprisingly simple, and exactly as bonkers delicious as you expect.

A basic, eggless cookie dough gets two quick December adaptations. First, peppermint extract in and vanilla extract out. Second, a balance of mint and dark chocolate chips replace the standard semi-sweet used the rest of the year. Boom boom pow. Peppermint flavored cookie dough. It’s really not a responsible thing to store in your fridge.

(The more responsible thing is clearly to get Oreos and more chocolate involved.)

Twisting open the Oreos without breaking either half is tricky business. A bowl of discarded Oreo cookie parts is kind of a blessing, but also a curse.

The Oreos that keep it together are filled with a small scoop of cookie dough (think, half the size of the dough balls you’d normally make to bake) and re-sandwiched.

The whole mess goes into a bowl of melted chocolate, and comes out to be topped with crushed candy cane pieces, a hint at the peppermint goodness inside.

Let’s be real. These make unreasonably good gifts for co-workers or neighbors or teachers…those people you want to wish goodness to this time of year, without letting the season get out of control. (By season I might mean spending. It’s fine.)

It says, I care about you enough to leave eggs out of the dough. To spend my afternoon eating broken cookie pieces. To get you crazy into Oreos just before new year’s resolutions.

Peppermint Chocolate Chip Cookie Dough Stuffed Oreos

Cookie Dough
recipe adapted from Love and Olive Oil

1 cup butter, at room temperature
3/4 cup granulated sugar
3/4 cup brown sugar
1 teaspoon peppermint extract
1/3 cup milk
2 1/2 cups flour
1 teaspoon salt
1 cup mint and dark chocolate chips (Tollhouse sells a bag of “winter” chocolate chips…it’s these!)

Cream butter and sugars. Add peppermint extract and milk, and beat to incorporate. Gradually, add in flour and salt, beating until smooth. Fold in chocolate chips. Store in refrigerator.

To Assemble:

Untwist Oreo cookies, discarding any that break. Top one side of the open cookie with the peppermint dough. Place the other side atop the dough, and press down gently, being careful not to break the cookie. After sandwiches have been assembled, dip each in melted chocolate. (I used about 1.5 pounds of chocolate here.) Immediately after a dip in the chocolate, place the cookie sandwich on a baking sheet lined with wax paper and sprinkle with crushed candy cane pieces. Store completed sandwiches in the refrigerator.

I think I just died. Oreo’s are like the worlds best creation, then you just go and thow cookie dough in the middle…. excuse me while I go make then devour these…

PS – Gone Girl was some kind of amazing! I seriously couldnt put it down! It was also freaky that the husband’s name is Lance (my husbands name) and their aniversary is the same day as mine…so weird! I for sure would have eaten 10 of these if I had them when I read it ;)
