One Piece of Brownies

It feels a little unAmerican to say anything other than I want to be Gabby Douglas right now. Except maybe I want to be Gabby Douglas’ best friend. In addition to being ridiculously nice, I’m basically willing to bet she would kick my butt into productive mode. Which I’ve been…exactly out of these days.

In my world this looks like a bathroom that still needs to be cleaned. I sort of maintain that if the US soccer game hadn’t gone into overtime this afternoon this wouldn’t still be at the top of my to-do list.

There’s more…but actually acknowledging everything but maybe the pedicure feels a little ridiculous. And pressing.

Avocado (for Brownies)

The good news is, there was time in my otherwise lazy days for brownies. (I know…there’s actually always time for chocolate in this life.)

And, rather than butter as the standard fat in these brownies, I’ve skipped over it for avocado. The end result is a fudgier, healthier brownie. Where else can you get a trade-off like this one?

This is reason number sixty five I’m obsessed with avocado this summer. And chocolate. And the Olympics.

But not my chore list. I think you get this.

Avocado Brownie

(Avocado) Brownies

2 medium avocados, smashed
2 squares unsweetened baker’s chocolate
1 cup sugar
2 eggs
1 teaspoon vanilla
3/4 cup flour
1/2 teaspoon baking powder
1/2 teaspoon salt

Peel, pit and smash avocados and set aside. Melt chocolate (in the microwave is fine) and add to avocado. Add sugar, eggs and vanilla and beat until smooth. Fold in flour, baking powder and salt. When combined, spread into a greased 9×9″ baking pan. Bake in a preheated 350° oven for 30-32 minutes. Let cool before topping with powdered sugar.

I am so obsessed with avocados and brownies and the Olympics and Gabby Douglas right now. Now I need some avocado brownies while I watch the Olympics!

You sound just like me in more ways than one. I totally love Gabby and I’m also obsessed with avocado, chocolate, and Olympics! The heart on top is adorable….I need these in my tummy now!!

Yes…but unless you use unsweetened chocolate chips (do those exist?!) you’ll need to adjust the sugar and I’m not sure of what the new ratio would be.

I haven’t ever baked with avocados but I think that should change at the earliest! These brownies look so decadent!

Chores are overrated and they never end no matter how much you keep up there is always something else the next day. It would be hard for me to make these since avocados don’t last long in my house. I eat them on and with everything.

I’m totally obsessed with the Olympics right now. I should be writing syllabi and lesson plans because school is around the corner, but I get sucked into the Olympics every time!

I have a bag of unsweetened chocolate chips in my cupboard so yes, they do exist. I don’t even remember where/when I got them though.

My main obsession with the Olympics has been to try to watch something other than beach volleyball because doing so is such a challenge! If it wasn’t for streaming it online, I think I wouldn’t get to see anything at all!

Anyway, I think using avocado in place of oil/butter is genius. I’ve been pleasantly surprised at how versatile the fruit is and how well it’s willing to get along with anything it’s paired up with. (I know…I ended the sentence with a preposition, but it’s not my blog, so it’s ok.)

I’ll bet I could even get Dudette to eat these and enjoy them and THEN tell her what’s in them!

I love everything about this! We are obsessed with the Olympics and Avocados around here. Just had some last night on my pasta salad. I have been meaning to bake with avocados for the last year. I think this just motivated me!!

I’m sorry…I can’t think about brownies. That avocado picture left me awestruck. It’s nearly perfect. If God had Pinterest, I think He’d probably “pin” it on His “freaky fruits” board. (Do you think He loved mixing it up by making some of the fruits seem like veggies?)

If God can make beautiful fruits which look like veggies and act like fats, He can sustain one lovely young woman while she moves and help her find the job He intends for her to get. Trust Him.
