Black Bean Soup

When my husband is out of town, I mostly rock at single lady life.

I call wine and cheese dinner...and don't feel a bit guilty about it.

I watch the Bachelor and Dawson's Creek back to back. And only get a little confused at taking on the satellite to dvd switch responsibility.

I snuggle with the pup. I sleep in the middle of the bed. I brew flavored coffee.

In spite of the night light in the bedroom and the ever-growing honey-do list on the fridge, I'm fairly certain that things look like I'm self-sufficient. Like I'm in control.


Mostly...was definitely the key to all this.

It's only when my husband is out of town that all 85 pounds of dog leaps through screened windows. That tree branches fall alarmingly close to the house in storms. That the water heater breaks.

If I was not the world's most frugal individual, I'd pay experts to deal with all of these problems.

Instead, I cry. I get it together. I talk myself into braving a cold shower for exactly three seconds...and then I cry again.

I make soup. I take exactly one picture of it before I realize I'm delaying my best warm up strategy.

I sit on the couch, curled in a blanket, smelling like too much Abercrombie perfume and watch Joey fall in love with Pacey.

Because the fact that no one capable of fixing water heaters is home also means that no one interested in judging my tv choices is home. I need a bright side here.

This has been my life...since Saturday.

Tomorrow morning, I'm taking a hot shower. Or calling in sick and finishing season three on dvd already while my husband fixes the most inconvenient appliance to break. (I'm going to regret saying that the next time he's gone. I.just.know.it.)

Black Bean Soup

1/2 red onion, diced
2 cloves garlic, minced
2 tbsp extra virgin olive oil
2 (16 ounce) cans black beans, drained and rinsed
1 tbsp chili powder
1 tsp cumin
4 cups vegetable broth
1/2 cup corn

Sautee onion and garlic in olive oil for 2-3 minutes. Add black beans (rinse and drain them first) and season with chili powder and cumin. Stir to coat evenly with seasonings. Add vegetable broth and bring to a boil. Reduce heat and simmer for 20 minutes. Add corn in last five minutes. Remove from heat and blend with an immersion blender, until beans are somewhat pureed, but still as chunky as you desire. Serve with shredded cheddar cheese. (Plain yogurt or avocado would be a dream here too!)

  3. oh no! a couple years ago when my husband was out of town I spilled water on the computer (he was out of the country so we were only about to email/chat online) AND had to drive myself to urgent care after getting celery stuck in my throat. I don't know why the freak accidents happen when husbands leave. we need them :)

  4. Dawsons creek back to back?? (Yes, I AM 29 - why do u ask?), Flavoured coffee? Epic sunggles with the pup? Hardcore frugality? I hope you also spend a serious amount of time online shopping... only to abandom your cart when it comes to handing over your card! Not to mention eating vegan choc chip cookies for dinner at 6pm. Then we can officially be twins!

    I also LOVE mexican black bean soup and am SERIOUSLY having soe for lunch today! Wow! xox

  5. Oh, No! I remember those times! Before email and cellphones (I'm dating myself) I was making a CASSETTE tape recording to my hubby and while I was in the kitchen the garbage disposal FELL OFF and detached from the plumbing on the wall...... water spewed everywhere! I kept the recording to him, but finished it with the plumbing bill!

    Enjoy your quiet time....but it's always sweeter when they're home!

  6. The soup looks delicious, even that one single picture. Don't feel too bad. If our water heater broke and Hubby was home we'd still need to call the professional. He's a computer geek well and truly....gorgeous, but still a computer geek. :)

  8. this soup looks just delicious! + ps - i know exactly what you mean. i love the idea of quiet time when my husband is out of town ... until i hear creaks + noises in the house, + the heater isn't working right, + stuff breaks. hope your hubby is home soon!

  11. Oh, you are so cute! I wish my HUsband woul dget out of town for a couple of days! I would love to make the foods I love, relax and enjoy some wine, watch what I want on tv, bake until all hours of the night! :)

  14. Cold showers are the worst. Ugh. If that were to happen while I was home alone, you better believe I'd be sitting under my wool blanket crying. I'm not even sure I'd muster the courage to make soup. I give you credit. It looks good!

  15. You husband-less life sounds a lot like mine. Once I could not figure out the right button on the remote for 3 days...he was gone for 4. I read trashy novels and didn't feel guilty.
