Cake Batter Pancakes



There is nothing bad you can say about sprinkles.

They're like that one girl in high school who's super pretty and still attractively smart. And! Nice to everyone and down to earth.

Right. Does that girl even exist?

So...one bad thing about sprinkles. They end up everywhere. On the counter. On the floor. Under my fingernails when I try to pick them up before people notice the mess. But it's totally forgivable. Because they're sprinkles. That's pretty much an untouchable item.

Adding sprinkles to anything and everything is a good idea.

Adding sprinkles to pancakes? Really good idea.

Adding sprinkles and cake batter to pancakes? Holy heck delicious.

These are the perfect birthday pancakes. I'm going to start traditions with them. But unless I find people with birthdays on a seriously regular basis who want to come over and eat pancakes with me, I'm going to have to cheat tradition and make them on boring old regular days, just for a spice up.

When's your birthday? Can you come? I'll even let you customize your sprinkle color combination. Which, let's be honest here, is pretty serious stuff. I need every excuse in the world to eat these pancakes again. And again. Thanks for helping me out with that one. You're a gem.

Cake Batter Pancakes
recipe from How Sweet Eats

1 1/2 cups flour
2/3 cup yellow cake mix
1 tbsp sugar
3/4 tsp baking powder
pinch salt
2 eggs
1 tsp vanilla
1 cup milk
assorted sprinkles

Combine flour, cake mix, sugar, baking powder and salt in a large mixing bowl. Add eggs, vanilla and milk, and stir until combined. Your batter should be the consistency of regular old pancake batter, so if you need to add a little more milk, go for it. Fold in sprinkles. Spoon onto greased griddle or large skillet and flip when the edges begin to dry, cooking evenly on both sides.



Serve topped with vanilla glaze.



Glaze

1 cup powdered sugar
2 tbsp milk
1/2 tsp vanilla extract
assorted sprinkles

Whisk powdered sugar, milk and vanilla extract together. Fold in additional sprinkles.

    The pancakes sound AMAZING. Terrific to add bursts of sprinkles in there. I'd totally rather have these than cake for a birthday.

  22. These are the best birthday pancakes that I've seen and I am a fan of sprinkles. A really good way to eat them is sprinkled on buttered bread because they will stick on the butter so you don't lose any, very important consideration;-)

  35. Ah! I saw these on Jessica's blog and almost flipped with excitement at the mere site of them! Cake Batter ice cream is my FAVORITE flavor at Coldstone, and it's rare that I go a week without it. I might need to turn it into pancake form now :)
