Red Velvet Chocolate Chip Cookies

I like you.

Have I failed to mention that lately?

Shoot.

You and your nice sayings and dinner ideas make my day.

Seriously. I’m super pleased that you’re here.

I made you cookies. These cookies are red and festive. I happen to think that they are all sorts of fantastic when paired with hot chocolate and eaten curled up on the couch with a good book.

(Clearly, cookies are best with chocolate and books. It means the world is quiet and tasty and leaving you the heck alone. Score.)

I think you need more time for you in your days. And these cookies in your house definitely demand it. Add them to your baking list already. (It’s okay if they bump something off. I won’t tell anyone.) Then, relax.

Red Velvet Chocolate Chip Cookies
recipe from How Sweet It Is

1/2 cup butter
1/2 cup sugar
1/2 cup brown sugar
1 egg
1 tsp vanilla
1 tsp red food coloring
1 1/2 cups flour
1 tsp baking soda
1/4 tsp salt
1/3 cup cocoa powder
1/2 cup semi-sweet chocolate chips

Cream butter and sugars. Add egg and vanilla, mixing well. Beat in food coloring.

Stir in flour, baking soda, salt and cocoa powder until just combined. Fold in chocolate chips.

Drop by rounded teaspoon onto an ungreased cookie sheet and bake in a preheated 375 degree oven for 10-12 minutes. Let cool slightly before transferring to wire racks.

Red velvet is everywhere this year. I don’t remember seeing it in cookie form, though. These are wonderful; like little packages of fun (which is much better than the huge fondant ribbon wrapped cakes I saw at Sam’s Club this morning). I like the idea of eating just one small morsel of red velvet versus an entire cake (of course, you will notice I said “idea”….there’s no telling what reality will bring!)

Cut the baking soda and salt in half and these came out great! I also used gel food coloring so I added a 1/4 Tbsp of water.

Just made these, with 2/3 cup of Ghirardelli White Chocolate Chips instead of 1/2 cup regular chips. They came out tasting great, but a little crunchier than I like. Any advice on how to make them chewier?

Reply

Baking Serendipity December 6, 2011 at 11:01 pm

@Jon: I love the white chocolate chip idea! For a chewier cookie, try adding an additional egg yolk.

I made these today and, to my knowledge, used the recipe exactly as written (unless I used a wrong measuring cup somewhere). But my cookies didn’t flatten :( They baked up as ball cookies. I could have stuck a straw into the batter and sucked it down, it was SOOOO good! Seemed just the right consistency, so I don’t know what went wrong :( I will definitely be trying again soon! ;) LOVE red velvet!

Reply

Mine did the same thing :(

Reply

Ashlee December 14, 2011 at 3:20 pm

I made these last night & they taste great! But my dough didn’t seem “wet” enough. It was very very dry before cooking. Mine also did not flatten when cooked, kept a lumpy/mis-shapen look. I’m not entirely sure if I’ll try these again because I felt like they were too dry for my taste. But maybe I’ll keep at it.

Anonymous February 12, 2012 at 5:57 pm

Me too, I might add a little less cocoa or try the crisco butter flavor sticks instead of butter next time.

mine came out exactly the same! at least they were still yummy!

My only question is: Does the butter need to be softened before being used? I can’t imagine the butter creaming well with the sugar when it’s straight from the fridge…

These are fantastic! I substituted half earth balance margarine and half palm oil shortening for the butter and egg replacer and soy milk for the eggs and they turned out great. Easy milk and dairy free or vegan option if that fits your diet.

I just made these today! They are absolutely perfect. I was nervous at first because the dough looked a little flaky and separated, but if you mushed it up, it was fine. Also, while cooking it doesn’t go flat. It just stays in a ball form, and goes down a little when you take them out. I added a little more chocolate pieces. Great idea. Next time, I want to add in white chocolate. This are the best cookies I’ve ever made! Love them! Thanks for the recipe!

I made these today with m&m’s and the m&m’s were the only good part. The cookies tasted bland and not sweet enough. I was totally disappointed.

Reply

Kjean September 14, 2012 at 5:34 pm

Red velvet is buttermilk and chocolate, not just red food coloring. Am I missing something? They look very pretty otherwise!

Beth September 22, 2012 at 9:35 am

I made these and they were very dry, so dry my mixer broke! However the pics are decieving…the mix isn’t that wet. But remember they are cookies, not cake. Also, don’t “ball” them, cookies remember, note how they are in a package! But, I added a yolk and it helped. They are a tad dry but good. Taking them to a NCSU game, I’ll get feedback.

I made these for fun one night with a friend and we loved them! I made them to take to another friend’s house for dinner a few weeks later, and now everyone keeps asking me to bring them to functions! These cookies are such a hit, so easy to make, and the dough tastes just as good as the cookies do! ;)

Tara September 26, 2012 at 5:39 pm

My problems with this recipe are its way too dry (I added a little extra water) and my cookies are no where near red. They are a very dark brown with not even a hint of red to be found anywhere. My balls did turn flat instead of staying ball shaped like some of the others have had a problem with. In my opinion as a baker, this is nowhere near a red velvet cookie recipe. It’s more of a very chocolate cookie recipe.

Reply

Tara September 26, 2012 at 10:44 pm

Oh and also after they cooled just a bit, they were hard as rocks!

Molly October 29, 2012 at 4:42 pm

Delicious! I just made these on a whim, and I substituted the egg for two tablespoons of mayo since I had no eggs! Turned out great and yielded 12 mini cookies and 11 larger ones. Thanks for sharing!

I made these this weekend, my dough was kinda dry also so I added a little water and a little oil. My first batch wasn’t too great so the second ones I only cooked 8 minutes and they are chewy and delish! Even the next day! So I would recommend reducing cooking time.

Allison November 18, 2012 at 6:28 pm

I just made these cookies and….
1. The batter was brown no red anywhere
2. Batter was very thick
3. Cookie is a little dry
4. Very chocolately – I would consider these cookies very chocolate cookie
5. Not a bad recipe just didn’t turn out the way I had hope

Laura December 9, 2012 at 9:16 am

I added an egg and these came out perfect!! They were way too dry/ hard the next day without the added egg. Everyone had been begging me to make them again. They are belittle more brown then red but still delicious.

Amy December 15, 2012 at 5:16 pm

These are in the oven right now, but I also found the batter to be very dry. I added a couple tsp. of water plus an extra egg yolk. I don’t know how you get 48 cookies out of this recipe?? I barely got 24. Hoping they taste good, but I don’t think mine are going to be very red either despite using the very concentrated gel coloring.

O-M-G- soooo yummily, in the middle of putting my third batch in the oven right now. I dunno how the others did theirs so I can’t begin to explain how it ended up wrong BUT I followed the recipe EXACTLY step by step, I even doubled the measurements. The only changes I made was of course the doubling but having room-temp butter(which in baking is a no brainer), I also did a full cup of white chocolate chips & a half cup of milk chocolate chips. I also in-between batches put the remaining mixture in my deep freezer to harden up a little so it would be a little bit more easier to dollop out on the cookie sheet pan(no I personally didn’t roll them up into balls b/c well it didn’t call for that it says to “drop rounded teaspoons” & my cookies did flatten/spread out like normal cookies do). I also ended up changing the time on mine to 8mins, I did originally try the 10mins & they were good, def had some crunch to the outside but absolutely soft in the middle–but I personally like my cookies to be a little more softer & ooeyer(haha if that’s such a thing) so I did my second batch on 8 mins and to me that was it & adding the white chocolate chips to me added that extra umph for red velvet…..DEF A hit on your hands I know SEVERAL kiddos will be extremely happy tomorrow, making these for my sons entire daycare center for snack for Valentines Day(they’re celebrating all month long). Thank you for this GREAT recipe!! :D

I just tried this recipe. I didn’t have chocolate chips so I just chopped up some semi-sweet baking chocolate into chunks. The cookie dough seemed a bit dry when I was mixing it, but then it turned out great! Both the dough and the baked cookies are delicious. Definitely a recipe I am putting into my recipe box. Thanks for posting!
